The Oxford Artisan Distillery is the only one in the world with a licence to use John’s grains, grown exclusively for flavour and not yield. He takes 30-100 varieties, mixes them up and grows them in the same field, similar to farming practices used in medieval times. The grains are the result of Oxford-based archaeobotanist John Lett’s lifelong research: sourcing and growing mixed populations of heritage grains – rye, wheat and barley adapted to the local growing conditions. This gin is produced from ancient heritage grains and sustainable farming methods not used for more than 100 years, with no agri-chemicals, zero nitrogen and minimal tillage.
